milk for homemade yogurt: whole, skim, UHT and plant bases
The carton is part of the recipe. Compare its protein, fat, heat treatment and ingredients before treating two milks as interchangeable.
look beyond the fat percentage
Milk contains proteins as well as fat. Acidification changes the protein system and allows a yogurt gel to form. Skim milk still contains those proteins; less fat does not mean that a set is impossible. Milk composition also varies across animals and breeds, so check your product label rather than relying on one universal composition.
| Choice | Useful comparison | Recipe to explore |
|---|---|---|
| Whole, reduced-fat or skim | Protein and fat per equal serving, not just the front-of-carton name | Classic yogurt or a strained variant |
| Goat or sheep milk | Species, protein, fat and the texture of your own batch | Goat milk yogurt or sheep milk yogurt |
| Added milk powder | The additional solids and the amount added before preparation | Yogurt with milk powder |

UHT and ultra-filtered describe different processes
UHT describes a high-temperature treatment and, for shelf-stable milk, aseptic packaging. Ultra-filtration separates milk components using membranes. A carton can involve both processes, but the terms are not synonyms. Check the heat-treatment statement and protein content separately.
| Label term | What it tells you | What it does not settle |
|---|---|---|
| Pasteurized | The milk has received a pasteurization treatment | Whether your yogurt recipe includes an additional texture-building heat hold. |
| UHT / ultra-pasteurized | The milk has received a high-temperature treatment | Whether any cold-start method suits the exact milk and equipment. |
| Ultra-filtered | Membranes have changed or separated milk components | Its incubation temperature or whether it needs a separate heat step. |

lactose-free milk and plant beverages need their own checks
Starting with lactose-free milk is different from expecting fermentation to remove all lactose. Check starter yogurt, milk powder and other additions as well; yogurtsim does not measure the finished lactose content. Lactose-free dairy milk still contains dairy proteins.

match a plant base to its culture and preparation
Plant proteins do not make the same gel network as dairy milk proteins. Research comparing legume and milk protein isolates found different structures after fermentation. Carton beverages also differ in protein, sugar, fat and stabilizers. Use a recipe developed for the selected base and culture rather than carrying over every dairy setting.
choose pasteurized milk for a physical batch
CDC recommends pasteurized milk and dairy products. Raw milk and products made from it, including yogurt, can carry harmful microorganisms. A raw-milk simulator preset is an educational comparison of model behavior; it does not establish the safety of the milk or the finished batch.

common questions
can skim milk make thick yogurt?
It can form yogurt, and preparation and straining affect the final texture. Compare a skim-milk preset with a skim Greek-yogurt preset to see fermentation and concentration as separate stages.
is UHT milk the same as ultra-filtered milk?
No. One describes heat treatment; the other describes membrane processing. Read both the processing information and the nutrition label.
